CRANBERRY LEMON BITES [ PALEO / VEGAN ]
Made from a combination of almond flour and coconut flour, these bites have insane texture to them. I would almost call them fudgy or truffle-like in texture because of how dang soft they are – and yet they hold together so well. I’m sort of kind of in love with them
It’s bright, tart and balanced perfectly with just a touch of maple syrup to sweeten. Paired with the dried cranberries which also offer a nice bite of tart and sweet, I’m fairly certain that these Cranberry Lemon Bites aren’t lacking in anything!
It hasn’t been hard cutting down my carbohydrate consumption, especially with these Cranberry Lemon Bites in the fridge ready for snacking. In my personal opinion, diet changes and healthy eating is never actually as hard as people think it is, you’ve just got to prepare in advance! Having meals and such prepared and ready to go whenever needed is the key to staying on track. What’s that saying – fail to plan and plan to fail? Something like that
These Cranberry Lemon Bites are the perfect paleo and vegan snack. Made from a combination of almond flour and coconut flour, these grain-free bites are deliciously tart!
INGREDIENTS :
- 1½ cups almond flour
- ⅓ cup coconut flour
- ¼ cup maple syrup
- ¼ cup lemon juice, fresh
- ¼ cup coconut oil, soft
- ½ teaspoon vanilla extract
- 2 teaspoons lemon zest
- ¼ cup dried cranberries, roughly chopped
INSTRUCTIONS :
- Mix together the coconut oil, maple syrup, lemon juice and vanilla extract in a large bowl until smooth.
- Add remaining ingredients and mix until dough forms. Set dough in the fridge for 20 minutes to firm.
